Carrot Cupcakes for Afternoon Tea

I used this easy  recipe for the cupcakes. They were delicious and light in texture with the addition of almond meal (also dairy free, without the icing of course!) I didn't make the icing from the recipe, I just mixed together light cream cheese, vanilla and icing sugar and topped them off with a chocolate Speckled Egg.

I decided to create a vintage look setting for the table with roses from my garden, pretty linens and op-shopped china, and I added a few Easter decorations as well.





Almost feels like Spring!
