The time has come for me (once again!) to really focus on living more healthfully and mindfully. But this time, I am being serious. Really serious. I do not like the way I look or feel, and having to buy my first ever pair of jeans from the large lady section did not make me happy. OK, so the jeans are a cute distressed boyfriend style, and they are a little big, but never the less they are size 18. (There I said it)I have never been this size, or weight....ever. And this needs to change. I need to change.
I have joined Weight Watchers with my best friend Sharon (AGAIN!). We no longer live close to each other, and I am travelling a far distance to go to the same meeting, so we have made a pact which involves continuously losing weight in order to keep seeing each other. Surely this will keep me motivated, if nothing else can.
So far I have lost just over 2 kgs in 3 weeks and I am feeling good about that.
Tonight for dinner, the family were craving Mexican. I read the nutrition panel and decided that some changes could be made without compromising on taste.

Taco Salad for me
This was delicious and filling. For starters I used chicken mince instead of beef. I weighed 100gms of the chicken for myself and added it to a big bowl of salad (symphony lettuce, red onion, grape tomatoes and fresh coriander). I shredded up 1 of the tortillas, and I topped the salad with a small serve of the salsa and a teaspoon of WW sour cream. And I enjoyed every mouthful.
And now I have said it......it's out there. Another reason to be accountable.
