By popular demand... 2 cups SR Flour
40gm melted butter* +20gm extra
1/4 cup caster sugar
3/4 cup milk
cinnamon
2tbs brown sugar
Sift flour and caster sugar into a bowl. Pour in 40gm melted butter and mix well. (*If you wish/am not lazy you can rub the unmelted butter in)Pour in the milk and mix to make a dough. Knead well.
Melt extra butter and brown sugar together. Flour board and then use half the dough to form a rectangle about 5mm thick. Sprinkle with cinnamon and then brush on half of the brown sugar/butter. Roll up dough from the long side and then use a sharp knife to cut into 4 or 5 pieces. Repeat with second half. Place on a baking paper lined tray. Brush the tops with any remaining mixture and bake at 180 for 10-12 minutes or until golden.
***I used skim milk and lite butter to reduce the guilt factor!
