Cafe' Style Banana Bread
mmmm, this was just delicious as evidenced by the large quantity gone, moments after coming out of the tin!
2 cup plain flour
2 tsp baking powder
1/2 tsp ground cinnamon
6 tbs soft butter
3/4 cup brown sugar
1 tsp vanilla essence
2 eggs
3 small ripe bananas, well mashed
1/2 cup plain yoghurt
· Preheat oven to 180°C. Spray 2 loaf tins with oil. Line bases with baking paper.
· Sift flour, baking powder and cinnamon together in a bowl and set aside.
· Beat butter, sugar, and vanilla essence in a separate bowl using electric beaters until light and creamy. Add eggs, one at a time, ensuring each egg is beaten well before adding the next. Fold through flour, bananas and yoghurt, making sure not to overbeat mixture.
· Spoon mixture into prepared tins, smoothing surface with a spatula. Bake in pre-heated oven for approximately 50 minutes, or until golden brown and cooked through when tested with a cake skewer.

Yum! This looks amazing... I actually wish I had bananas in the fruit bowl, might rectify that this afternoon :)
