My Sunday

Carrot, pineapple & zucchini cake
1/4 cup olive oil
1/2 cup caster sugar
2 eggs
200gm crushed pineapple
1 medium carrot, grated
1 medium zucchini, grated
1 3/4 cups sifted SR flour
1 tsp bicarb soda
1 tsp cinnamon
1/4 tsp nutmeg
Preheat oven to 180. Spray and line a 22cm square pan with baking paper. Beat oil and sugar together, then beat in eggs. Stir in pineapple, carrot and zucchini. Stir in sifted flour, spices and soda. Spoon into cake tin and smooth surface. Bake 35-40 minutes. Cool in pan.
Cream Cheese frosting: using electric mixer beat 125gm light cream cheese with 1/4 cup sifted icing sugar mixture until smooth. stir in 1tsp lemon juice. Spread frosting over top of cake and then cut into sqaures to serve.
Whilst this is a healthy (Weight watcher's) recipe, it is actually moist and delicious!
Christmas Presents

I decided to make a start on my Christmas crafting. This are Gratitude Wraps from SouleMama. I am making them for my two, 10 year old nieces and will put in smiggle pens, notebooks and a book of stamps too. I have decided to make 4, so I can pop a couple into the present cupboard as well. They are sewing up super quick. Just need to get some batting and bias binding so I can complete them. I feel a trip to Spotlight coming on.... Hope you've had a productive Sunday too!

Off now to make Sweet and sour chicken for dinner!

  4. I made the cake today! Isn't it great that when we need a recipe we can find it on someones blog!! I had to prepare supper for a small Weight Watchers (small in number not in their sizes!!!LOL)group so I made scones and the cake. Doubled the mixture so that I would have a spare one for the freezer and also put some mixture in a muffin tin so that I could taste it too. Very moist and yummy! Thanks so much.

  5. MmmMmmMmM, sounds delicious! I love a cake full of vegetables. It means I can have an extra slice, just to meet my daily veggie requirements of course!
